A Warm, Fragrant Staple for Your Kitchen Apothecary
There are a handful of spice blends that earn a permanent place in my kitchen.
Garam masala is one of them.
Unlike many seasoning blends that lean heavily savory or spicy, garam masala brings warmth more than heat, and that works very well with all the young’uns I have in the Treehouse. Cinnamon, cardamom, coriander, cumin, and cloves work together to create a blend that’s deeply aromatic and incredibly versatile.
It’s one of my husband’s absolute favorites, and he puts it in a lot of things he makes.
Whenever I make a meal that includes garam masala, he notices, and I will often use it if my curry powder is out or low. This blend makes the house smell different; warmer. Dinner feels a little more special. It’s one of those flavors that has become part of our family’s food memories.
And the best part?
Making your own takes only a few minutes.

Why Make Your Own?
Homemade seasoning blends allow you to:
Adjust the heat to your family’s preference.

Nicole’s Garam Masala Blend
Fuel Flow: Neutral Fuel Serves: Multiple
Ingredients:
2 teaspoons ground coriander
2 teaspoons ground cardamom
1¼ teaspoon cayenne pepper or chili powder (adjust to taste. I find the chili powder less spicy than the cayenne)
1½ teaspoons ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground nutmeg
1 teaspoon black pepper
1 Tablespoon ground cumin
¼ teaspoon ground allspice
1 teaspoon fennel seeds(I do grind these)
Directions:
Whisk all ingredients together until evenly combined.
Store in an airtight glass jar away from heat and sunlight for up to one year, although the flavor is at its brightest during the first six months.
If you prefer a finer texture, pulse the blend briefly in a spice grinder or blender after combining.

This blend shines in:
Butter chicken
Chicken curry
Lentil dishes
Roasted vegetables
Rice pilaf
Ground beef or lamb
Sheet pan meals
Soups and stews
Yogurt marinades
Dry rubs for chicken
Indian Cabbage Rice
Cauliflower, Kale and Peanut Curry
Egg Curry
Indian Cabbage Curry
Don’t be afraid to experiment. Garam masala isn’t limited to one cuisine or one recipe. Sometimes I’ll sprinkle a little into roasted carrots or sweet potatoes simply because the warm spices complement their natural sweetness.
