A Different Syrup, Not a Lesser One
Coconut sugar brings a deeper flavor than allulose. Instead of the maple-forward flavor of our sugar-free syrup, this one leans toward caramel and brown sugar.
It’s rich, pourable, and thickens beautifully as it cools.
What began as a solution for an ingredient I didn’t have became a recipe worth keeping for the flavor it brings all by itself.
Sometimes you make a recipe because you have a grand culinary vision.
Sometimes you make a recipe because you don’t have the ingredient you normally use.
This was the second kind.
I already had our Homemade Sugar-Free Maple Syrup, made with allulose, and it had earned a permanent place in our kitchen. But allulose isn’t always something I have sitting on the pantry shelf.

Coconut Sugar Syrup
Fuel Flow: Carb Forward Condiment
Serves: Multiple. Approximately 1½ cups.
Ingredients:
2 cups coconut sugar
¾ cup water
½ teaspoon agar agar powder
¼ teaspoon salt
1 teaspoon vanilla extract
1 teaspoon caramel extract
Directions:
1. Combine the coconut sugar, water, agar agar, and salt in a small saucepan.
2. Bring to a full boil over medium heat, stirring frequently.
3. Once the mixture reaches a full boil, boil for 5 minutes, stirring as needed.
4. Remove from the heat. Stir in the vanilla and caramel extracts.
5. Allow to cool and thicken before serving.
The Most Important Step: Let It Boil
There is one instruction in this recipe that I don’t want you to skim:
Bring the syrup to a full boil before you start the 5-minute timer.
We’re using agar agar to create the finished syrup consistency, and agar needs to reach boiling temperature to activate properly.
If the mixture gets hot but never actually boils, you may wait patiently for your syrup to thicken after cooling…
The syrup will still look thinner while it’s hot. That’s expected. It develops more of its finished syrup-like consistency as it cools.
Fuel Flow Note
Coconut Sugar Syrup brings a Carb-Forward fuel to whatever you’re serving—but that doesn’t automatically make the entire meal Carb-Forward.
If the rest of the meal stays relatively lean, the syrup can fit naturally into a Carb-Forward meal. If the base recipe or accompaniments bring substantial fat alongside those carbohydrates, you’ve moved toward a Dual Fuel meal.

One Syrup, Plenty of Places to Use It
This is where a recipe like this earns its place as a Pantry Foundation.
I don’t want to make a jar of something that requires me to invent a reason to use it. I want foundations that connect naturally to foods we’re already making.
And we have plenty of places for syrup to go.
Bring it to the table with our Plate-Size Protein Pancake, Family-Size Blueberry Pancakes, or waffles.
Try a drizzle over one of our Snack Cakes or Oatmeal Bakes. It adds sweetness, moisture, and caramel-brown-sugar flavor without changing the whole recipe.
