Sometimes I want pancakes
Not six tiny pancakes that require standing over the stove flipping batch after batch.
Not a complicated breakfast project.
I want one enormous pancake that takes up the plate.
Because if one pancake can do the job, I see absolutely no reason to make seven.
So, that’s exactly what I make.
This Plate-Size Protein Pancake has been one of my simple Trim Healthy-style breakfasts: five ingredients, plenty of protein, and one gloriously enormous pancake. It’s also exactly the kind of recipe that translates naturally into Fuel Flow and belongs in Not By Bread Alone.
Simple food with enough possibility to make it your own.

One Pancake. One Pan. One Breakfast.
There is something deeply satisfying about pouring the entire bowl of batter into the skillet.
No measuring little circles.
No trying to make them approximately the same size.
No first pancake sacrificed to the Pancake Gods while I figure out the temperature of the pan.
We’re making the pancake.
The whole thing.
It also makes this a wonderfully practical breakfast when I want something warm without turning breakfast into an event.
And around here, practical food gets made again.

Plate-Size Protein Pancake
Fuel Flow: Fat-Forward Serves: One
Ingredients:
3 eggs
¼ cup Baking Blend
1 tablespoon granulated sweetener or 1/4 teaspoon Monk Fruit Extract powder
1 teaspoon vanilla extract
1 teaspoon baking powder
Directions:
Add the eggs, Baking Blend, sweetener, vanilla, and baking powder to a small bowl.
Mix until the batter is smooth and everything is thoroughly combined.
Lightly preheat a stainless-steel skillet, then coat it with coconut cooking spray.
Once the pan is preheated, turn the heat down before adding the batter. Pour the entire bowl of batter into the skillet, allowing it to spread into one large pancake.
Don’t Wait for the Bubbles…
This is probably the most important thing to know the first time you make it:
Mine does not bubble like a traditional pancake. I may see only four or five bubbles across the entire pancake before it’s ready to turn.
Cook over medium heat until the underside has set and the pancake is cooked enough to flip in one piece. This will be longer than you’re accustomed to with a gluten-flour-made pancake, so practice patience…I know, it’s hard.
So don’t stand there waiting for the surface to fill with bubbles. You’ll likely end up with a very well-done bottom while you’re patiently waiting for a signal that isn’t coming.
Instead, watch the pancake itself.
The edges should look increasingly set, and it should have enough structure that you can get your spatula underneath it and flip the entire pancake.
Then comes the fun part. Commit to the flip with the widest spatula you own.
Once flipped, continue cooking until the center is completely cooked through.
Transfer your plate-size pancake, unless you made more than one to avoid the spatula wars, to—you guessed it—a plate.
Now for the Toppings
This is where you get to make it yours. Simple. Delicious. Done.
My favorite combination is peanut butter and sugar-free syrup. I have the best of both in my Maple Nut Syrup, But your pancake doesn’t have to look like mine.
Try berries, Greek yogurt, a little butter, chopped nuts, cinnamon, a favorite sugar-free syrup, or whatever toppings make pancakes worth making in your house.
That’s the beauty of a simple foundation.
It leaves plenty of room for possibility.

Trim Healthy + Fuel Flow Notes
This recipe was originally created within the Trim Healthy framework, using Trim Healthy Baking Blend and an on-plan granulated sweetener.
Peanut butter is a personal favorite topping here and keeps this firmly in Fat-Forward territory in Fuel Flow when paired with an appropriate sugar-free syrup.
With three whole eggs and Baking Blend as its foundation, the pancake fits naturally into a Trim Healthy S-style meal when paired with appropriate toppings.
And, of course, toppings matter. Adding a significant carb source can change the finished meal, so build the plate according to the fuel you’re intending to enjoy.
That’s one of the reasons I use both languages throughout Not By Bread Alone.
If you’re a Trim Healthy Mama, you can recognize the familiar S, E, FP, and Crossover framework you’ve been using to build meals.
If you’re using Fuel Flow, you’ll also see those meals described through Fat-Forward, Carb-Forward, Neutral Fuel, and Dual Fuel language.
Different language.
Same goal here:
Understand what you’re building so you can make an intentional choice—and then enjoy your giant pancake.
Now for the Toppings
If breakfast has to involve multiple mixing bowls, six burners, and an emotional-support spatula before I’ve finished my coffee, we’re going to have problems.
This recipe needs:
One little bowl.
One pan.
One flip.
One plate-size pancake.
That’s my kind of breakfast.
It’s also exactly the kind of recipe I want in Not By Bread Alone: food that respects real-life capacity while still giving us something genuinely enjoyable to eat.
Because gluten-free food doesn’t have to feel like the consolation prize.
Sometimes it gets to take up the whole dang plate.
