Meal Prep While You Sleep
Some meal prep happens with cutting boards, and an afternoon in the kitchen.
Some of mine happens while I’m asleep.
And, I’m not ashamed to say it is so useful that I keep my appliance army working every night to meet the demands of feeding my crew.
Sometimes the most useful thing I can prep isn’t a meal. It’s a possibility.
That’s why I cook most of my potatoes in my crockpots.
I can load it before bed, go to sleep, and let several pounds of meal prep happen without me. That’s hands-off capacity at its finest.
My Potato Tetris Game Is Strong
We usually start with a 10-pound bag of potatoes…Large family problems.
And I don’t load them loosely.
There’s just one important boundary:
The crockpot lid still has to sit the way it’s supposed to.

Crockpot Baked Potatoes
Fuel Flow: Carb-Forward
Hands-Off Prep
Servings: Variable
Ingredients:
Approximately 7 pounds potatoes, or as many as will fit
Crockpot volume is an “ingredient” here because it affects both the cooking process and food output.
½ cup water…or more
Directions:
1. Wash the potatoes. Arrange them whole in a crockpot, fitting as many as possible while making sure the lid can still sit properly.
2. Add ½ cup water to the bottom of the crock for a 6qt…
I use 1 Cup of water for my 8qt or 10qt Crockpots.
Cover and cook:
Low: overnight, my preferred method
High: approximately 4–5 hours
Cooking time will vary depending on the size and number of potatoes and how your crockpot cooks. The potatoes are ready when easily pierced with a fork.
Serve immediately, or refrigerate promptly for future meals.
If holding the potatoes on Warm for several hours, rotate them occasionally if needed so those resting against the bottom and sides don’t continue cooking more quickly than the others.

The Potatoes Aren’t Really the Recipe
I don’t necessarily load the crockpot because I need seven pounds of baked potatoes.
I load the crockpot because I want several pounds of cooked potatoes.
A finished meal solves one meal.
A prepared ingredient can give me options for several.
We might eat some of these as baked potatoes with dinner and refrigerate the rest. I don’t necessarily have to know what happens next.
Future Me gets to decide. It makes life more interesting.
Rooted Kitchen notes
A crockpot full of potatoes doesn’t require me to know exactly what we’re eating three days from now. That’s part of why I like it.
Maybe tonight needs baked potatoes.
Maybe tomorrow needs Home Fries.
Maybe Tater-Topped Casserole needs a head start.
Maybe there’s a meal I haven’t even thought of yet…I’d love to hear how you use them!
The potatoes can wait in the refrigerator until I know.
I don’t have to prep every finished meal to make future meals easier.
Sometimes I can simply remove one future job.
Preparation creates possibilities.
