Family size is a wonderfully relative measurement
A batch that generously feeds one household might be a promising beginning in another.
Around the Treehouse, quantities that look enormous on paper can disappear pretty quickly once they’re divided among ten people.
That’s why I give the yield for this recipe in pancakes rather than servings.
How many people those pancakes feed depends on who’s eating, what else is on the table, and whether you’re feeding toddler appetites, teenager appetites, or the mysterious appetite of someone who said they weren’t hungry until the pancakes appeared. That’s real-life recipe math.

And Now We Need to Discuss Blueberry Equity…
I do not stir the blueberries into the batter.
There is a practical cooking reason for this.
If I dump two cups of blueberries into a big bowl of batter, gravity immediately begins reorganizing my carefully planned breakfast. Blueberries will sink.
But there is another reason. Equity is a big deal in a large family.
Children count things, and they carry strong feelings of personal justice.
If you’ve never watched a child conduct a forensic investigation into the blueberry distribution of two pancakes, you have lived a more peaceful chef life than I have.
So I sprinkle the blueberries directly onto each pancake after the batter hits the griddle.
Does this eliminate breakfast negotiations? No.
I’m a mother, not a magician. But it greatly reduces them. And I’ll take the win.

Family-Size Blueberry Pancakes Recipe
Fuel Flow: Fat Forward
Makes: Approximately 12–15 pancakes, depending on size.
Ingredients:
15 large eggs
1¼ cups Bulk Baking Mix
¼ cup allulose
1 tablespoon + 1 teaspoon baking powder
½ teaspoon salt
2 cups blueberries, for sprinkling
Directions:
1. Preheat a skillet or griddle over medium-low to medium heat.
Lightly grease if needed.
2. In a large bowl, whisk the eggs until thoroughly combined.
3. Add the Bulk Baking Mix, allulose, baking powder, and salt.
Mix until smooth and evenly combined.
4. Portion the batter onto the preheated skillet or griddle.
5. Sprinkle blueberries individually over each pancake while the first side cooks.
6. Cook until the edges are set and the pancake is sturdy enough to flip without falling apart. These egg-rich pancakes may not produce the traditional bubbles of a conventional pancake, so don’t rely on bubbles alone.
7. Carefully flip and continue cooking until the second side is
cooked and the center is set.
8. Repeat with the remaining batter and blueberries.
Building Your Fuel Flow
The Bulk Baking Mix is a Neutral Foundation. The eggs contribute protein and naturally occurring fat, while the blueberries contribute carbohydrates.
For a lighter, lower-carb direction, keep additional carbohydrates modest and choose toppings such as Greek yogurt, additional berries, or Cranberry-Raspberry Jam within your preferred carbohydrate range.
For a Dual Fuel meal, combine meaningful carbohydrate and fat sources.

A Note About Cooking These Pancakes
These pancakes are egg-rich, so they don’t behave exactly like a traditional flour-heavy pancake. In particular, don’t wait for the classic field of bubbles before deciding they’re ready to flip.
Watch the structure of the pancake rather than the bubbles.
Cook over medium-low to medium heat. When the edges are set and the pancake is sturdy enough to survive the flip without falling apart, it’s ready. Then carefully turn it and let the other side finish cooking until the center is set.
And if you’re making these for a crowd, there’s another piece of pancake mathematics worth considering:
The batter isn’t necessarily the bottleneck.
Your square inches of hot cooking surface are.
This is one reason I appreciate my countertop griddles.
Kitchen equipment earns its space in my house when it solves an actual problem. A larger cooking surface—or more than one cooking surface—means I can get more pancakes finished at the same time instead of cooking them three at a time while the people at the table eat faster than I can replenish the plate.
