There are some drinks you make because they are impressive.
And there are some drinks you make because it is hot, everyone is thirsty, and you would really prefer not to spend a small fortune keeping the refrigerator full of specialty beverages.
This is the second kind.
Green Tea Pineapple Lemonade is bright, tropical, refreshing, and easy to make by the gallon. It starts with ordinary green tea, gets plenty of crispness from lemon juice, and then pineapple extract does something surprisingly delightful to the whole pitcher.
No pineapple juice required.
No blender required.
Just a few simple ingredients and a gallon pitcher.
I’m using an inexpensive, shelf-stable ingredient to create the experience I’m after.
That is a kitchen principle I come back to again and again:
Use what is simple and available to create the experience you are actually after.
Why So Many Tea Bags?
If twelve tea bags in four cups of water made you stop and reread the recipe, you saw it correctly. We’re making a tea concentrate.
Instead of heating an entire gallon of water and then waiting forever for it to cool, I brew the green tea strongly in four cups of hot water. Once it has steeped, the remaining ingredients go in and cold water brings everything up to a gallon.
Green tea can become bitter when brewed with water that is too hot or when left to steep too long. I am also not pulling out a thermometer for a gallon of porch tea.
Even though this is a large recipe, it is absolutely not a bulk preparation for my household. It’s merely…”I made us a drink for lunch.”
A gallon disappears quickly in a large family.

Green Tea Pineapple Lemonade Recipe
Fuel Flow: Neutral Drink
Treehouse Tea
makes 1 Gallon
Ingredients:
12 green tea bags, decaf or caffeinated is up to you
4 cups hot water
1 cup lemon juice
Up to 1 teaspoon pure monk fruit extract powder, or to taste
1 teaspoon pineapple extract
4 pinches mineral salt
Cold water, to make 1 gallon
Directions:
1. Bring 4 cups of water to a boil. Remove it from the heat and let it
stand for a minute or two.
2. Place the green tea bags in a heat-safe pitcher or other large vessel. Pour the hot water over the tea bags and steep for 5 minutes. Remove the tea bags without squeezing them.
3. Stir in the lemon juice, pineapple extract, mineral salt, and a smaller amount of monk fruit extract to start.
4. Add enough cold water to bring the total volume to 1 gallon. Stir thoroughly and taste. Add additional monk fruit as needed.
6. Chill thoroughly. Taste once more before serving and adjust the sweetness or pineapple flavor if desired. Serve cold or over ice.
What If I Want to Use Pineapple Juice?
You absolutely can. Pineapple juice isn’t off-limits; it simply contributes something different to the finished drink.
The extract provides concentrated pineapple flavor without contributing a significant amount of carbohydrate. A substantial amount of pineapple juice brings the naturally occurring sugars of the fruit along with the flavor, so it may change the Fuel Flow of the finished drink.
My household pitcher will always start as a sugar-free, option because we eat according to the Trim Healthy Plan. And, if I were to add pineapple, it would be the whole fruit. Frozen and either chunked or blended to add a little flavor, fiber, and joy.

Make It a Tea-Phosphate
This one is practically asking for bubbles.
To turn Green Tea Pineapple Lemonade into a Tea-Phosphate, my simplest option is to make the regular gallon first and chill it thoroughly.
When you’re ready for a glass, pour some of the chilled tea over ice and top it with plain sparkling water.
You can decide how bubbly you want it without changing the entire pitcher, and everyone else can choose still or sparkling.
Keep everything cold and add the sparkling water immediately before drinking to protect that sparkly sensation.
If you want to make a sparkling pitcher for a gathering, you can also leave a little room when making the gallon and add chilled sparkling water just before serving. Don’t add the bubbles while the tea is warm or hours before you plan to drink it.
