There are recipes you make for dinner…
And then there are recipes you make because people are coming.
Or because you hope they might.
I call this Company Potato Salad because it was made to be shared. It’s the bowl that gets passed around backyard cookouts, family reunions, church potlucks, birthday parties, and holidays. It makes enough to feed a crowd, but I don’t wait for company to make it.
Sometimes “company” is just tomorrow’s lunch…because, potato salad is always better after sitting overnight.
This is the side dish I bring to our family gatherings. This year I made an entire gallon for our Independence Day celebration. We even enjoyed some before the cookout started, because it’s delicious and we needed to eat lunch, and by the end of the day there wasn’t much left to bring home.
That’s usually how this recipe goes.

Company Potato Salad
Serves: 16+ as a side dish
Ingredients:
8 cups cubed potatoes, cooked
8 cups cubed cauliflower, Steamed
1½ cups diced celery
1 small-medium onion, minced
1 Cup pickles(dill or naturally fermented) diced…or use dill relish, like I did.
1/2 Cup Diced Egg Whites, or Chopped up Scrambled ones
1 cup plain 0% Greek yogurt
2 tablespoons mayonnaise
2 tablespoons nutritional yeast or Miso Paste(find a gluten free one)
2 teaspoons salt, or to taste
2 teaspoons garlic powder
½ teaspoon black pepper, white pepper, red pepper flakes, or 1/4 teaspoon cayenne for a little kick
2 tablespoons Dijon mustard
1 tablespoon yellow mustard
Directions:
1. Cook the potatoes until they’re fork-tender but still hold their shape. Steam the Cauliflower. Allow them to cool if you want, but I prepare mine while things are hot because it seems to infuse the flavors better.
2. In a large mixing bowl, combine the potatoes, celery, and onion.
3. In a separate bowl, whisk together the Greek yogurt, mayonnaise, nutritional yeast, salt, garlic powder, pepper, and both mustards until smooth.
4. Pour the dressing over the potatoes and gently fold until everything is evenly coated.
5. Cover and refrigerate for at least an hour before serving, if you started with cooled potatoes and cauliflower. If you started with hot, keep them in the fridge longer. Like most potato salads, the flavor is even better the next day…if it last that long in your house.

Make It Your Own
One of my favorite things about this recipe is that it welcomes substitutions.
Use the potatoes you have.
Golden potatoes are my favorite, but russets, reds, or whatever is already in your pantry all work beautifully.
Even a cup or two of leftover mashed potatoes won’t hurt a thing. They melt into the dressing and make the finished salad even creamier.
Adjust the dressing.
The combination of Greek yogurt and mayonnaise creates a creamy dressing with the classic flavor many of us grew up with. In my case, my family ate Miracle Whip growing up, but we choose to be sugar free and gluten free in the Treehouse…You can absolutely add sweetener to taste for this experience.
Want to adjust the fat-forward fuel?
Adjust the ratio of mayonnaise and Greek Yogurt. This will change the fuel if you do, so pay attention and use your resources if that is important to you. My family likes more mayonnaise than yogurt, but you can replace all the mayonnaise with additional Greek yogurt too if you like it that way. You may find yourself adjusting the seasonings a bit since mayonnaise contributes some of the traditional flavor.
Need an egg-free or dairy-free option?
Vegenaise or another egg-free mayonnaise alternative works well, and dairy-free yogurt can be substituted if needed. Just remember that ingredient substitutions will change the nutritional profile of the finished recipe.
Use yellow mustard, Dijon, spicy brown, stone-ground, or your favorite combination. Mustard is one of the easiest ways to personalize the flavor.
Adjusting Your Carb Sources and Non-starchy Veggies
You could use all potatoes…my kids’ favorite way of eating this
Lower the carbohydrates by using:
8 cups cooked cauliflower, or broccoli if cauliflower is not your thing, you just want chunky non-starchy veggies.
8 cups cooked daikon radish or 8 cups cooked red radishes (if you don’t mind a little pink throughout the salad)
Or any combination of cauliflower, non-starchy veggie chunks and radishes.
Our family’s favorite addition
If you ask my family, the best version includes six diced hard-boiled eggs.
The only thing that might beat the eggs around here is chopped pickles.

Nicole Notes
One of the reasons I love this recipe is how adaptable it is.
The flavors carry the dish, and the veggies are totally customizable. If you like riced veggies(you can even just dice/rice your own), hate cauliflower and want to use green beans, or even use all mashed potatoes…you do you, and your crew. If they have sensory needs, texture matters, and I love seeing how people adapt.
As written, it’s a carb-forward side dish. If you follow the Trim Healthy Plan, this version fits into the Energizing (E) framework.
Or any combination of cauliflower, non-starchy veggie chunks and radishes
Because it doesn’t contain enough protein to stand alone as a complete meal, consider serving it alongside a very lean protein to create a complete carb-forward meal.
You can also increase the protein right in the salad by stirring in cooked egg whites. Scrambled egg whites work well, but so do diced hard-boiled egg whites—even the ones your kids thoughtfully left behind after eating all the yolks during yesterday’s lunch. (Maybe yours don’t do that like mine do!)
If you replace all of the potatoes with cooked radishes, you’ll have a large, company-sized Neutral Fuel side dish, with the dressing and other written additions. For those following the Trim Healthy Plan, this version falls into the Fuel Pull (FP) framework.
If you prepare the original recipe—or the all-potato version—and add the six diced hard-boiled eggs, and/or increase the ratio of mayonnaise the recipe becomes a Dual Fuel side dish. For those following the Trim Healthy Plan, this falls into the Crossover (XO) framework because of the added fat from the yolks and/or the mayo.
The beauty of this recipe is that it flexes with your pantry and your goals. Potatoes, cauliflower, radishes, completely different non-starchy veggies, egg whites, whole eggs, different mustards, or different yogurt and mayonnaise options all work. Every substitution changes the nutrition and fuel a little, so if you’re following the Trim Healthy Plan, be sure to verify your ingredients and fuel type using your own Trim Healthy resources.

From My Treehouse to Yours
One of my favorite kitchen habits is making company-sized food, even when company isn’t coming.
A big bowl in the refrigerator means tomorrow’s lunch is already waiting.
It means one less decision on a busy afternoon.
It means a neighbor can stop by and there’s enough to share.
It means your future self gets cared for by your present self.
Around here, we aren’t trying to cook perfectly.
We’re building homes where nourishing ourselves—and the people we love—fits into real life.
Sometimes that starts with a really big bowl of potato salad.
