Creamy Pickle Soup

I came across a pickle soup online, but it contained ingredients that did not fall into our way of eating. So, I went to the drawing board to make my own, because my children have a low-key obsession with pickles. And, I wanted to make it dairy free, because sometimes I like a bit of a challenge!

I think it is safe to say that this was one of my recipes that would either totally win my large family over, or totally flop and the chickens would reap the benefits of leftovers.

It won them over, and now I hope it does you too!

Method:

Put 5 Cups of water into a medium stock pot with the broccoli, okra, and onion. Bring to a boil, and place most of the vegetables into the blender with a slotted spoon along with 2-3 cups of the water. Add seasonings, collagen and gelatin. Then, blend the mixture until you can no longer see pieces of okra. Add back to the pot, along with all the other diced veggies, additional water, pickles and pickle juice. Bring to a boil again, and simmer for about 20 minutes.

***This recipe is a fuel pull on the Trim Healthy Plan. You may choose to include lean chicken if you want to, and still keep it in this fuel type.***

Golden Goulash

As a mom of 7, I love a good skillet meal. If it includes potatoes, then my whole crew is excited too!

Method:

Cook, and rinse if necessary, ground meat. Boil the diced golden potatoes, and drain. Then, add all ingredients to the same pot as the meat and cook until heated through.

Chili Mac

This recipe really brings back some memories. We ate chili mac, well really anything with macaroni and cheese, when my dad was away hunting. Mac was not his favorite food.

And, because our children have celiac disease, you can read more about that here, they had never had anything like it before. But, desperation is where recipes are born, so here is my gluten free rendition of this old favorite.

Method:

Brown Meat, and drain. Add diced onion and Chili seasoning, cooking until onions are translucent. Drain and rinse konjac noodles while the meat mixture cooks. Add other ingredients and cook on medium heat for a few minutes to meld flavors. Taste and adjust to suit you and your family.

Thick and Hearty Chili

Sometimes you just want a thick chili to go over your hotdog, and the great ones need no large introductions!

Method:

Brown the ground meat, and drain off fat. Add the Chili Seasoning, tomatoes, and water (if using). Let simmer for 25 minutes so that the flavors meld together. Own your flavors and adjust if necessary.

***The fuel that this chili falls into on the Trim Healthy Plan is going to be determined by the amount of fat in the meat you use, 96% or lower would be E or FP, and anything higher will be an S***

Charlie’s Chicken

I grew up in a town with a couple Chinese restaurants, and it was not uncommon for people to have strong feelings about which place served better food.

The owner of the restaurant that was my family’s favorite was named “Charlie” and this sweet and sour chicken recipe is as close to the flavors of his as I could get and still be on the Trim Healthy Plan.

Sweet and Sour in all the right ways, with twist of fresh veggies…that was always my favorite part at Charlie’s restaurant!

Method:

Pre-cook the chicken if you haven’t already, and remove from the pan. Mix all your wet ingredients together, and whisk in the pan until smooth and free of lumps. Turn the heat on, and add your dry ingredients, with Xanthan gum being whisked fully to avoid lumps in the sweet and sour sauce.

Heat the sauce until it thickens enough to coat the back of your spoon, then add your chicken, pineapple and veggies. Heat only until heated through.

***If you leave out the pineapple pieces this will be a fuel pull compatible meal. as written, there are not enough carbs for a good E so please serve with cooked brown rice or quinoa to fit into the Trim Healthy Plan***
